Food is more than just sustenance. Food reflects a community's history, culture, and values. From Tel Aviv and Mumbai to Brooklyn and everywhere in between, Jewish food takes on varied forms, but all Jewish cuisines are linked by their adherence to the laws of kashrut and their connection to Jewish rituals and holiday traditions.


Gil Marks will talk about the ways in which culinary history has been influenced by Jewish traditions and wanderings in the Diaspora. Foods change when people migrate from one side of the world to the other-and you will discover that Jews have played a pivotal role in transforming and transmitting different cuisines.


Gil Marks most recent book is the Encyclopedia of Jewish Food, He is also the author of the James Beard Award-winning Olive Trees and Honey: A Treasury of Vegetarian Recipes from Jewish Communities Around the World. He has written many other books and articles and given food demonstrations in highly regarded venues across the United States. Gil Marks was cited as one of the fifty most influential American Jews in the Forward's annual "Forward 50" feature in 2010.
