Kibbutz Yotvata, deep in the Arava Desert north of Eilat, is not where one would expect to find one of Israel's biggest dairy producers. But Israel is a strange country, and Yotvata produces much of the country's milk. It has expanded into the restaurant business with Yotvata Ba'ir (Yotvata in the City), which serves Yotvata's famous ice cream, other dairy treats, and juice in the heart of Jerusalem's Malcha Mall.
